Delicious with a Side of Red



There are few things I like more than a fruit dessert. And if there is any more sure a sign that nature has her engines up and running then the spring crop of berries mounded in hoards of red piles at the market... well I just don't know what it is.

Now I know that I'm a day late for Mother's day, but after eating this I was just too drunk on the sweetness of raspberries to post. But to make it up to you I'm gonna share this little confection reminiscent from my days as a dessert chef. What you see above is
the beginning of a delight known as raspberry fool. I'm not quite sure what about it drew the moniker 'fool'. Perhaps it is the weeping lump of jelly one becomes if told they must limit themselves to just one bite.

In any case this is a dish so simple it deserves to be made more often. To do my part to help transmit this meme, I'm gonna tell you the fast and dirty way to get this in your belly as fast as possible. 

What you see above is two cups of whipping cream whipped to stiff peaks. Yes I do add sugar, but unlike many recipes I use granular or superfine not powered. I also don't measure, but add a spoonful at a time just until I like the sweetness and not a grain more. At that point - see above - I add 2 flats of raspberries. Now many would tell you to pre-mash your berries, and surely you can, but since I like big chunks of berry I don't. I let the mixer tear them up and let the chunky bits fall where they may. At that point you should see something like this:



If you really want to make yourself crazy you can add dash of some of that Mexican Vanilla you made too. So what have we invested here... 10 minutes? Take this lustful bit of pink and dish it up.


So there it is folks. 10 minutes... What are you waiting for?

  1. haha this sounds like something my friend and I made...but a little healthier. We work in a restaurant, so we combined the left over whipped cream from tiramisu with the rasperry coulis and froze it into a sort of ice cream. Yum!

  2. Tiramisu and raspberry.... that does sound yummy! I sometimes miss working at a restaurant, then I put my feet up.
